Gluten Free Meatballs

Childhood Memories

I spent countless hours in the kitchen with my Italian grandfather while growing up. I always opted to help him cook instead of playing with my cousins. They didn’t know where the real fun was…or where the yummy snacks were! While I’ve yet to master his amazing recipe as being one of gluten free meatballs, I found this AMAZING one from Fountain Avenue Kitchen. It was incredibly easy to make gluten free and the only additional change I made was adding more garlic…because is there every enough garlic? This recipe will certainly fit the bill until I’m able to master my grandfather’s recipe!

In my home, we’re in the camp of spaghetti sauce needs to simmer all day, but what kind of spaghetti is it really if you don’t have any meatballs?! Let’s get started on how to make the most delicious Gluten Free Meatballs you’ve ever tasted!

Ingredients for Gluten Free Meatballs

1 lb hamburger
1/2 cup grated parmesan cheese
1 cup Ian’s Gluten Free Bread Crumbs – Italian Style
1/2 large onion, finely chopped
6-7 cloves garlic, finely chopped
1/2 tsp dried oregano
1 tsp salt
Fresh ground pepper to taste
1/4 cup minced fresh flat-leaf parsley

Gluten Free Meatballs

Directions for Gluten Free Meatballs

1. Mix all ingredients with hands.
2. Form into golfball size meatballs.
3. Line baking sheet with parchment paper and spray with olive oil. Bake at 350 degrees F for 30 minutes.

How to Make into a Freezer Meal

I’m all about simplicity and minimizing the amount of work I have to do when it comes to the kitchen. I want to eat well but I don’t want to spend my entire evening in the kitchen, and this is where meal planning and freezer meals come into play! Double this recipe and flash freeze! To flash freeze, all you have to do is place the additional baking pan into the freezer for about 30 minutes. Once the meatballs are frozen, remove them from the parchment paper and place in a ziplock bag.
